Serves 2
Homemade ice cream is a rich and decadent treat that is surprisingly simple to make. For some extra flavor, sprinkle some sea salt on the ice cream before serving.
Ingredients:
½ cup sugar
1 tablespoon date syrup
2 cups whipping cream
1 cup milk
3 egg yolks, beaten
Pinch of salt
½ teaspoon vanilla extract
½ cup chocolate chunks
Instructions:
1. In a medium saucepan, heat sugar over medium heat and stir until sugar turns a caramel color about 5 minutes. Turn heat to low and stir in date syrup and whipping cream for 5 minutes, or until all of sugar is dissolved. Remove from heat.
2. Whisk milk, eggs, salt, and vanilla with whipping cream/sugar mixture until combined.
3. Pour mixture into chilled bowl and refrigerate for an hour, or until no longer hot. Add ice cream to ice cream maker, following manufacturer’s directions. Add chocolate chunks as a “mix in” option according to ice cream maker’s instructions when appropriate.
