This nutritional powerhouse salad is as good-for-you as it is simple to make. Using pre-chopped dates saves a step during prep time and date syrup adds some sweetness to the dressing with no need for added sugars.

Ingredients:
1 garlic clove, minced
1 teaspoons date syrup
1 teaspoon pomegranate juice
2 tablespoons balsamic vinegar
½ cup extra virgin olive oil
Salt and pepper, to taste
6 cups baby kale
1 avocado, sliced thin
½ cup pomegranate arils
½ cup diced dates
¼ cup sunflower seeds
Instructions:
1. In a small bowl, whisk garlic clove, date syrup, pomegranate juice, balsamic vinegar, olive oil, salt, and pepper.
2. Plate salad using remaining ingredients. Drizzle salad with dressing.
