Sure, oatmeal raisin cookies are a classic. But have you ever tried oatmeal date cookies? Swapping out the raisins for chopped dates makes for a sweet and satisfying treat that will be a delight for those who don’t care for those dehydrated grapes.
Makes 3 dozen
Ingredients:
1/2 cup brown sugar
1/4 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 pinch salt
2 cups old fashioned oats
1 cup chopped dates
Instructions:
1. Preheat oven to 350 (F). In a large bowl, beat butter, sugars, eggs, and vanilla until creamy. Add remaining ingredients and mix well.
2. Scoop dough with a tablespoon and create balls. Place on an ungreased cookie sheet, with space in between to anticipate spreading while baking. Bake 10 minutes or until edges are golden brown. Remove from oven and cool 2 minutes. Transfer cookies to a wire rack and cool 5 minutes.
